Ingredients

  • 10 romaine lettuce leaves
  • 2 small pita bread
  • 2 green onions
  • 1 bunch radishes
  • 1 cucumber
  • 3 medium tomatoes
  • 1 clove garlic
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 teaspoon pepper
  • 1 teaspoon salt
  • 1/4 cup fresh mint
  • 1/4 cup parsley

Instructions

  1. Place the pita bread in the oven at 350°F to crisp, then cut into bite-sized pieces.
  2. In a large salad bowl, combine chopped romaine lettuce, chopped green onions, sliced radishes, sliced cucumber, tomato wedges, crushed garlic (if using), chopped mint, and chopped parsley.
  3. Add the toasted pita pieces to the salad bowl.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Serve immediately for a crunchy, fresh salad.
