Ingredients

  • 1 1/4 cups bread crumbs
  • 1 tablespoon minced fresh thyme
  • 1 teaspoon finely grated lemon zest
  • 3/4 teaspoon kosher salt
  • black pepper
  • 1 cup flour
  • 2 large eggs
  • 4 boneless chicken breasts
  • 1/3 to 1/2 cup oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, combine bread crumbs, minced thyme, lemon zest, salt, and pepper.
  3. Pound each chicken breast to an even thickness.
  4. Pat chicken dry and season both sides with salt and pepper.
  5. Place flour, beaten eggs, and seasoned bread crumbs each in separate shallow dishes.
  6. Dredge each chicken breast in flour, then dip into eggs, then coat with bread crumbs.
  7. Lay coated chicken breasts on a piece of wax paper.
  8. Heat a large skillet over medium heat and add oil.
  9. Cook two breasts at a time, placing smooth side down, about 2 minutes per side, until golden.
  10. Drain cooked chicken on paper towels or a rack.
  11. Transfer to a baking sheet and bake until firm to touch, about 8 minutes.
