Ingredients

  • 1 large tomato, diced
  • 2 tsp. finely chopped basil
  • 1 c. shredded potato
  • 1/4 c. chopped onion
  • 2 tsp. margarine
  • 1 c. Egg Beaters
  • 1/8 tsp. black pepper
  • 4 (8-inch) flour tortillas, warmed
  • 1/3 c. shredded reduced fat Cheddar cheese

Instructions

  1. Combine diced tomato and chopped basil; set aside.
  2. In a large nonstick skillet over medium heat, saute shredded potato and chopped onion in margarine until tender.
  3. Pour Egg Beaters into the skillet; sprinkle with black pepper.
  4. Cook, stirring occasionally, until the egg mixture is set.
  5. Divide the egg mixture evenly among the warmed flour tortillas.
  6. Top with shredded reduced fat Cheddar cheese.
  7. Fold the tortillas over the egg mixture.
  8. Top with the tomato and basil mixture.
