Ingredients

  • 1 lb pork sausage
  • 12 eggs
  • 1 can chopped green chilies
  • 1 cup shredded cheese
  • 10 to 12 flour tortillas

Instructions

  1. Brown and drain the pork sausage.
  2. Combine the beaten eggs, drained green chilies, and cooked sausage in a bowl.
  3. Cook the egg mixture in a skillet until eggs are done.
  4. Warm the flour tortillas in the microwave until just warm, being careful not to overheat.
  5. Place the cooked egg mixture on each tortilla and roll up.
  6. Serve the enchiladas with salsa if desired.
