Ingredients

  • 12 slices bread
  • 12 oz. bulk pork sausage
  • 3/4 cup (3 oz.) shredded Monterey Jack cheese
  • 1 1/2 cups (6 oz.) shredded pepper cheese
  • 1 1/2 cups sliced zucchini (optional)
  • 6 eggs
  • 3 1/2 cups milk
  • 1 (8 oz.) can tomato sauce
  • 1/3 cup green chili salsa or 1/3 cup tomato sauce
  • 1/4 teaspoon salt

Instructions

  1. Cut the centers out of the bread slices and set the centers aside.
  2. Place the remaining bread pieces in a greased 9 x 13-inch baking dish.
  3. Layer the cooked sausage, shredded cheeses, and sliced zucchini (if using) over the bread.
  4. In a bowl, beat the eggs, then add milk, tomato sauce, salsa, and salt, mixing well.
  5. Pour the egg mixture over the layered bread, sausage, and cheeses.
  6. Place the cut-out bread centers on top of the casserole.
  7. Cover the dish with foil and refrigerate overnight.
  8. Bake uncovered at 325°F (163°C) for 55 minutes.
  9. Let stand for 10 minutes before serving.
