Ingredients

  • 6 medium-sized zucchini
  • 3 tomatoes
  • 1/4 cup fat (e.g., oil or butter)
  • 2 onions
  • salt and pepper
  • 1/4 pound pork or bacon
  • 2 sweet green peppers
  • 1 cup grated cheese

Instructions

  1. Dice and fry crisp bacon or crumbled, cooked sausage if desired.
  2. Slice the zucchini, tomatoes, onions, and green peppers.
  3. In a large skillet, sauté onions and green peppers until tender.
  4. Add diced zucchini and cook until slightly softened.
  5. Stir in chopped tomatoes and cook for a few minutes.
  6. Season with salt and pepper to taste.
  7. Sprinkle grated cheese over the top and cook until cheese melts.
  8. Serve hot, garnished with bacon or sausage if using.
