  • 1 c. chopped pecans
  • 1 (3 oz.) pkg. lemon jello
  • 2 Tbsp. vinegar

Instructions

  1. Bring 3 cups of boiling water to a boil.
  2. Add the lime and lemon jello packages and marshmallows to the boiling water.
  3. Stir until completely dissolved.
  4. Chill the mixture until it reaches the consistency of egg whites.

Tips & Substitutions

For a smoother texture, ensure the cream cheese is at room temperature before mixing. If you prefer a different flavor profile, consider substituting the lime and lemon jello with orange or raspberry jello. You can also use walnuts instead of pecans for a different nutty flavor. For a lighter version, reduce the cream cheese to 8 oz. and increase the pineapple.

Serving Suggestions

This refreshing salad is perfect as a side dish for brunch or a light dessert. It pairs beautifully with Elsie'S Apple Cake for a delightful meal. Serve chilled in individual bowls or on a platter, and consider garnishing with additional pecans or fresh fruit for an attractive presentation.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To serve, simply scoop out what you need; it doesn't require reheating. If it becomes too firm, you can let it sit at room temperature for about 10 minutes to soften slightly before serving.

Frequently Asked Questions

Can I make this recipe ahead of time?

Yes, this dish can be made a day in advance. Just be sure to keep it tightly covered in the refrigerator. Making it ahead allows the flavors to meld together beautifully and ensures a firmer texture when serving.

What can I substitute for the cream cheese?

If you're looking for a lighter option, consider using Greek yogurt or whipped cream cheese as a substitute. This will change the flavor slightly, but it will still provide a creamy texture. For a dairy-free option, try using a plant-based cream cheese alternative.

Is this recipe suitable for vegetarians?

Yes, this recipe is suitable for vegetarians as it does not contain any meat or animal-derived gelatin. However, always check the jello packaging to ensure it meets your dietary preferences, as some brands may include additives that are not vegetarian.
