Ingredients

  • 1 1/2 cups chopped onion
  • 2 teaspoons butter or oil
  • 5 cups broth
  • 1 large head broccoli, stems sliced crosswise
  • 4 medium potatoes, peeled and diced
  • 3/4 cup chopped celery
  • 1/2 teaspoon black pepper
  • 1 teaspoon lemon juice
  • 1/4 teaspoon thyme leaves, crushed
  • 1 bay leaf
  • 3/4 teaspoon salt
  • dash of cayenne
  • 2 cups skim milk
  • 1 pound crab meat or sea legs, sliced into 1/2-inch pieces
  • 1 1/2 cups diced carrots

Instructions

  1. In a large saucepan, sauté onion in butter or oil until soft.
  2. Add broth, sliced broccoli stems, half of the potatoes, half of the carrots, celery, black pepper, lemon juice, thyme, bay leaf, salt, and cayenne. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes.
  4. Remove the bay leaf.
  5. Puree the vegetables and broth in a blender until smooth.
  6. Return the puree to the pot. Add remaining carrots and potatoes and cook over low heat for 5 to 10 minutes.
  7. When potatoes and carrots are nearly soft, add broccoli flowerets.
  8. Cook for an additional 15 minutes.
  9. Add milk and crab meat, and heat the soup without boiling.
  10. Serve the bisque with croutons if desired.
