Ingredients

  • 10 oz. frozen chopped broccoli, thawed and drained
  • 2 Tbsp. chopped onion
  • 1/2 cup liquid Butter Buds
  • 4 extra large egg whites
  • 2 boxes (8 1/2 oz.) Jiffy corn muffin mix
  • 8 oz. nonfat cottage cheese

Instructions

  1. Combine all ingredients except cottage cheese; mix well.
  2. Gently stir in the cottage cheese.
  3. Pour the mixture into a 13 x 9 x 2-inch pan sprayed with Baker's Joy.
  4. Bake at 350°F (175°C) for 40 to 45 minutes until golden and cooked through.
