Ingredients

  • 5 cups chopped fresh broccoli flowerets
  • 2 tablespoons water
  • 24 ounces cottage cheese
  • 4 eggs
  • 1/4 cup melted butter
  • 1/3 cup all-purpose flour
  • 11 ounces canned whole kernel corn, drained
  • 2 cups shredded Cheddar cheese
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat broccoli in a vented, covered dish; add water.
  2. Cook in the microwave for 4 minutes.
  3. Drain and set aside.
  4. Preheat oven to 350 degrees Fahrenheit.
  5. Combine cottage cheese, eggs, melted butter, and flour in a blender; process until smooth.
  6. Set aside the blended mixture.
  7. Add the cooked broccoli, drained corn, chopped onion, salt, and pepper to the blender mixture; mix well.
  8. Stir in shredded Cheddar cheese.
  9. Pour the mixture into a greased baking dish.
  10. Bake at 350°F for about 20 minutes or until bubbly and golden.
