Ingredients

  • 2 cups frozen shredded hash browns
  • 1 cup shredded cheddar cheese
  • 1 cup diced fully cooked ham
  • 1/2 cup chopped fresh broccoli
  • 4 eggs
  • 1/2 cup milk
  • 1 teaspoon dried minced onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Place hash browns in a greased 9-inch microwave-safe dish. Microwave, uncovered, on high for 4 minutes or until thawed.
  2. Press hash browns onto the bottom and halfway up the sides of the dish.
  3. Microwave, uncovered, on high for 3 minutes, then sprinkle with cheese, ham, and broccoli.
  4. In a bowl, beat the eggs, milk, dried minced onion, garlic powder, salt, and pepper.
  5. Pour the egg mixture over the ham and vegetable layers.
  6. Cover with wax paper.
  7. Microwave at 70% power for 10-12 minutes or until set.
  8. Let stand for 5 minutes before cutting and serving.
