Ingredients

  • 9 eggs
  • 10 oz. frozen chopped broccoli, thawed and drained
  • 1/3 cup chopped onion
  • 1/4 cup grated Parmesan cheese
  • 2 Tbsp. milk
  • 1/2 tsp. salt
  • 1/2 tsp. dried basil
  • 1/4 tsp. garlic powder
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Beat eggs in a bowl until light and fluffy.
  2. Stir in the chopped broccoli, chopped onion, 1/4 cup Parmesan cheese, milk, salt, dried basil, and garlic powder.
  3. Pour the mixture into an ungreased 11 x 7 x 2-inch baking dish.
  4. Sprinkle 1/4 cup Parmesan cheese on top and place tomato wedges on top.
  5. Bake uncovered at 325°F until set, 25 to 30 minutes.
