Ingredients

  • 1 pkg. frozen broccoli
  • 1/2 c. chopped onions
  • 1/2 c. celery
  • 1 c. rice
  • 1 stick margarine
  • 1/2 c. milk
  • 2 eggs
  • 1 c. shredded Cheddar cheese
  • Hi Ho crackers

Instructions

  1. Cook broccoli or squash until tender and prepare rice separately.
  2. In a mixing bowl, combine cooked broccoli or squash, cooked rice, chopped onions, celery, melted margarine, milk, eggs, salt, and pepper.
  3. Mix until well combined.
  4. Pour the mixture into a casserole dish.
  5. Top with crushed Hi Ho crackers.
  6. Bake at 350°F (175°C) for 30 to 40 minutes until the top is browned.
