Broccoli (Or Zucchini) Casserole
A comforting casserole featuring tender broccoli or zucchini combined with creamy, savory flavors, topped with buttery stuffing for a hearty, family-friendly meal.

- In boiling, salted water, add chopped broccoli or zucchini and chopped onion.
- Cook until tender.
- Drain and let cool.
- In a bowl, combine grated carrots, undiluted cream of celery soup, and sour cream. Mix well.
- Set aside.
- Melt margarine in a skillet and add the stuffing mix, tossing to coat.
- Spread half of the stuffing mixture in the bottom of a casserole dish.
- Combine cooked broccoli or zucchini with the soup mixture and spread over the stuffing layer.
- Top with the remaining stuffing mixture.
- Cover and bake at 350°F for 45 minutes.
