Ingredients

  • 1 bunch broccoli or zucchini, cut up
  • 1 chopped onion
  • 2 grated carrots
  • 1 can undiluted cream of celery soup
  • 1 cup sour cream
  • 1 stick margarine
  • 1/2 bag Pepperidge Farm stuffing mix

Instructions

  1. In boiling, salted water, add chopped broccoli or zucchini and chopped onion.
  2. Cook until tender.
  3. Drain and let cool.
  4. In a bowl, combine grated carrots, undiluted cream of celery soup, and sour cream. Mix well.
  5. Set aside.
  6. Melt margarine in a skillet and add the stuffing mix, tossing to coat.
  7. Spread half of the stuffing mixture in the bottom of a casserole dish.
  8. Combine cooked broccoli or zucchini with the soup mixture and spread over the stuffing layer.
  9. Top with the remaining stuffing mixture.
  10. Cover and bake at 350°F for 45 minutes.
