Ingredients

  • 2 Tbsp. chopped onion
  • 1/2 lb. broccoli, trimmed and chopped
  • 2 c. chicken broth
  • 1/2 tsp. grated fresh ginger
  • 1/8 tsp. cayenne pepper
  • 1/2 c. low-fat plain yogurt

Instructions

  1. Combine the chopped onion, chopped broccoli, and 1/2 cup of chicken broth in a 2-quart casserole.
  2. Cover tightly and cook on High for 6 to 9 minutes, or until the broccoli is tender, stirring once.
  3. Pour the mixture into a food processor or blender and finely chop.
  4. Return the mixture to the casserole.
  5. Stir in the remaining chicken broth, grated fresh ginger, cayenne pepper, and low-fat plain yogurt.
  6. Cover and cook on High for 2 to 6 minutes, or until just heated through, but not boiling.
