Broccoli-Tomato Pie

Ingredients

  • 2 1/2 cups cooked leftover rice
  • 2 eggs
  • 4 teaspoons butter
  • 1 tablespoon flour
  • 1 cup milk
  • 10 oz frozen broccoli, thawed and chopped
  • 3/4 cup shredded Swiss cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium ripe tomato, sliced
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Stir together rice and eggs in a large bowl.
  2. Melt butter in a medium-sized saucepan.
  3. Stir in flour; cook, stirring until smooth. Cook, stirring, until thickened and bubbly, about 2 minutes. Remove from heat; stir in broccoli, cheese, salt, and pepper. Cool to lukewarm.
  4. Stir broccoli mixture into rice. Turn into a 9-inch pie plate.
  5. Bake in preheated 350°F oven for 25 to 30 minutes or until center is almost set.
  6. Remove from oven and pan. Arrange tomato slices around outer edge of the pie.
  7. Sprinkle with Parmesan cheese.
  8. Broil for 1 to 2 minutes or until golden.
