Broccoli-Tomato Pie
A delicious savory pie combining broccoli, tomato, Swiss and Parmesan cheeses with rice, perfect for a comforting meal or family dinner.

Instructions
- Stir together rice and eggs in a large bowl.
- Melt butter in a medium-sized saucepan.
- Stir in flour; cook, stirring until smooth. Cook, stirring, until thickened and bubbly, about 2 minutes. Remove from heat; stir in broccoli, cheese, salt, and pepper. Cool to lukewarm.
- Stir broccoli mixture into rice. Turn into a 9-inch pie plate.
- Bake in preheated 350°F oven for 25 to 30 minutes or until center is almost set.
- Remove from oven and pan. Arrange tomato slices around outer edge of the pie.
- Sprinkle with Parmesan cheese.
- Broil for 1 to 2 minutes or until golden.
