- In a large nonstick frying pan over medium-high heat, combine the diced onions, vinegar, minced garlic, minced gingerroot, and low-sodium soy sauce.
- Bring to a boil, stir, and cook for 3 minutes. Remove from heat.
- Meanwhile, season the salmon fillets with salt and pepper as desired.
- Preheat the broiler and place the salmon on a broiler pan or baking sheet.
- Broil the salmon for about 6-8 minutes, or until cooked through and slightly browned on top.
- While the salmon is cooking, toss the sliced cucumbers with the onion mixture.
- Serve the broiled salmon over hot cooked rice, topped with the cucumber and onion mixture.
