Ingredients

  • 1 cup diced onions
  • 1/2 cup vinegar
  • 4 cloves garlic, minced
  • 2 teaspoons peeled minced gingerroot
  • 1 teaspoon low-sodium soy sauce
  • 2 cucumbers, thinly sliced
  • 1.5 pounds salmon fillets
  • 1 tablespoon olive oil
  • 4 cups hot cooked rice

Instructions

  1. In a large nonstick frying pan over medium-high heat, combine the diced onions, vinegar, minced garlic, minced gingerroot, and low-sodium soy sauce.
  2. Bring to a boil, stir, and cook for 3 minutes. Remove from heat.
  3. Meanwhile, season the salmon fillets with salt and pepper as desired.
  4. Preheat the broiler and place the salmon on a broiler pan or baking sheet.
  5. Broil the salmon for about 6-8 minutes, or until cooked through and slightly browned on top.
  6. While the salmon is cooking, toss the sliced cucumbers with the onion mixture.
  7. Serve the broiled salmon over hot cooked rice, topped with the cucumber and onion mixture.
