Ingredients

  • 1/2 tsp. minced onion or shallot
  • 1 bud garlic, minced
  • 4 Tbsp. butter or margarine
  • 1 1/2 dozen clams in the shell, well scrubbed
  • 1/2 c. water or dry white wine
  • 2 Tbsp. flour
  • 1/2 c. cream or evaporated milk
  • 3/4 c. fine dry bread crumbs
  • 1/4 c. grated cheese

Instructions

  1. Saute the minced onion or shallot and garlic in 2 tablespoons of melted butter for 3 minutes.
  2. Add the well-scrubbed clams and the wine or water, cover the pan, and simmer for 5 to 10 minutes until the clams open.
  3. Remove the clams from the pan and take the clams out of their shells.
  4. Chop the clam meat or put it through a meat grinder.
  5. Rinse the shells in cold, running water and set aside.
