Brown Beef Stock

Ingredients

  • 1 lb. cracked marrow bones
  • 2 lb. beef shin, cut into 1-inch cubes
  • 1 qt. water
  • 1/2 c. diced onion
  • 1/4 c. diced carrots
  • 1/4 c. diced celery
  • 1 sprig parsley, minced
  • 1/4 tsp. thyme
  • 1/4 tsp. marjoram
  • 8 peppercorns
  • 5 cloves
  • 1 Tbsp. salt

Instructions

  1. Heat pressure cooker.
  2. Melt marrow; brown beef cubes.
  3. Stir in remaining ingredients.
  4. Close cover securely.
  5. Place pressure regulator on vent pipe.
  6. Cook 15 minutes.
  7. Let pressure drop on its own accord.
  8. Strain.
  9. Beef stock is used as the basis for many soups and sauces.
  10. A clear broth or bouillon makes an appealing appetizer.
