Buffet Chicken Casserole

Ingredients

  • 3 Tbsp. butter or margarine
  • 3 Tbsp. all-purpose flour
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • several dashes hot pepper sauce
  • 2 c. chicken broth
  • 1 c. half and half milk
  • 1 1/4 c. grated Parmesan cheese
  • 2 c. cooked chicken (meat cut from bone in large pieces)
  • 3 Tbsp. lemon juice
  • 1/2 lb. fresh mushrooms
  • 8 oz. thin spaghetti

Instructions

  1. Melt butter in a medium saucepan; stir in flour, salt, pepper and hot sauce.
  2. Cook over medium heat for 2 minutes, stirring slowly; add chicken broth (stirring).
  3. Cook until slightly thickened.
