Ingredients

  • 1 (2 lb.) pkg. frozen country style potatoes
  • 1 cube margarine, melted
  • 1 pt. sour cream
  • 1 (10 1/2 oz.) can cream of chicken soup
  • 1/2 c. chopped onion
  • 1 tsp. salt
  • 2 c. shredded Cheddar cheese
  • 1/2 tsp. pepper
  • 1 c. cornflake crumbs

Instructions

  1. Combine the frozen country style potatoes and 1/2 cup melted butter in a large bowl.
  2. Stir in sour cream, cream of chicken soup, chopped onion, shredded Cheddar cheese, salt, and pepper.
  3. Place the mixture in a greased 13 x 9 x 2-inch baking dish.
  4. Combine cornflake crumbs and 1/2 cup melted butter.
  5. Sprinkle the cornflake mixture over the casserole.
  6. Cover with foil and bake at 350°F for 20 minutes.
  7. Uncover and continue baking for an additional 20 minutes until golden brown.
