A comforting Thanksgiving casserole combining tender squash, creamy mushroom and sour cream, seasoned onion and carrot, topped with flavorful stuffing for a hearty holiday dish.

Ingredients

  • 2 lb. squash
  • 1 can cream of chicken soup
  • 1 small can mushrooms
  • 8 oz. sour cream
  • 1 large onion
  • 1 carrot
  • 1 stick butter
  • 1 box Stove Top stuffing mix

Instructions

  1. Cook squash until tender and drain well.
  2. Slice the onion and grate the carrot.
  3. In a microwave-safe dish, melt the butter and cook the onion and carrot for 3 minutes.
  4. Mix the cooked onion and carrot with sour cream, mushroom soup, salt, pepper, cooked squash, and three-quarters of the stuffing mix.
  5. Pour the mixture into a casserole dish.
  6. Mix the remaining stuffing mix with melted butter and spread evenly over the top of the casserole.
  7. Bake at 350°F (175°C) for 30 to 40 minutes until heated through and golden on top.
