Burger Stuffed Onions

Ingredients

  • 6 large onions
  • 2 Tbsp Wesson oil
  • 1 lb lean ground beef
  • 2 Tbsp chopped green peppers
  • 2 Tbsp dry bread crumbs
  • 1/4 to 1/2 tsp chili pepper
  • 1/2 Tbsp salt
  • 1/8 Tbsp black pepper
  • 3 slices American cheese
  • 1 (8 oz) tomato sauce

Instructions

  1. Peel onions and cook in boiling salted water for 30 minutes or until tender yet firm.
  2. Drain and cool the onions.
  3. Slice off the top third of each onion.
  4. Cut out the centers to make cups.
  5. Chop 1/2 cup of the onion centers.
  6. Sauté the chopped centers in Wesson oil with ground beef and green peppers for 5 minutes.
  7. Mix the sautéed mixture with bread crumbs, chili pepper, salt, and black pepper.
  8. Fill the onion cups with the beef mixture.
  9. Top each with a slice of American cheese.
  10. Pour tomato sauce over the stuffed onions.
  11. Bake until the cheese is melted and bubbly, about 10-15 minutes.
