Ingredients

  • 1 1/2 lb. flank steak
  • 1/2 tsp. freshly ground pepper
  • 2 Tbsp. oil
  • 3 Tbsp. wine vinegar
  • 1/2 cup dry red wine
  • 3 cloves crushed garlic
  • 3 Tbsp. minced fresh parsley
  • 1 Tbsp. fresh chopped oregano
  • 1 tsp. dried oregano
  • 1 Tbsp. fresh tarragon
  • 1 tsp. dried tarragon

Instructions

  1. Place steak in a baking dish and cover with marinade made from the remaining ingredients.
  2. Turn to coat the steak, then cover and refrigerate for at least 8 hours, turning occasionally.
  3. Preheat the broiler. Remove the steak from the marinade and pat dry.
  4. Sprinkle freshly ground pepper on the steak.
  5. Broil the steak 4 to 6 inches from the heat source for 4 to 7 minutes on each side.
  6. Slice thinly across the grain and serve.
