Ingredients

  • 1 1/2 lb. boneless round steak or lean chuck

Instructions

  1. Cut beef into 3/4-inch strips.
  2. Pat dry the beef strips.
  3. Cook bacon in a large skillet until crisp.
  4. Transfer cooked bacon to a 2-quart covered baking dish.
  5. Add onions to bacon drippings in the skillet.
  6. Reduce heat to medium and cook onions until browned.
  7. Add browned onions to the bacon in the dish.
  8. Brown the beef in the skillet, a few pieces at a time.
  9. Transfer browned beef to the bacon dish.
  10. Add salt, black pepper, red wine, garlic, mushrooms, 3/4 cup water, parsley, celery, carrots, and thyme to the dish.
  11. Cover the dish and bake at 300°F for about 2 hours until the meat is tender.
  12. Remove beef, mushrooms, and onions from the dish.
  13. Strain the cooking liquid into a saucepan.
  14. Thicken the strained liquid with the remaining flour and water mixture.
  15. Pour the thickened sauce over the meat and vegetables before serving.
