Ingredients

  • 6 to 7 medium carrots
  • 1/4 cup water
  • 2 tablespoons chopped onion
  • 1/4 cup chopped celery
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 cups liquid (carrot supplemented with milk)
  • 1/2 cup fine dry bread crumbs
  • 3 tablespoons butter

Instructions

  1. Cook carrots in 3/4 cup water until tender, about 15 to 20 minutes.
  2. Drain and save the carrot liquid.
  3. Melt 1/4 cup butter in a saucepan.
  4. Saute chopped onion and chopped celery until tender.
  5. Add flour, salt, and pepper and mix well.
  6. Gradually add the reserved carrot liquid and milk, stirring constantly.
  7. Cook or bake at 350°F for 30 minutes.
  8. Sprinkle bread crumbs over the carrot mixture and dot with melted butter.
