Ingredients

  • 1/3 cup melted shortening
  • 3/4 cup sugar
  • 2 bananas, sliced
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup buttermilk
  • 1 teaspoon vanilla

Instructions

  1. Add 1 tablespoon vinegar to milk to make buttermilk and let it sit for a few minutes.
  2. Preheat oven to 350°F (175°C).
  3. In a mixing bowl, combine melted shortening and sugar.
  4. Add egg, vanilla, and the prepared buttermilk to the mixture and beat well.
  5. Stir in sliced bananas.
  6. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  7. Gradually add dry ingredients to wet ingredients, mixing just until combined.
  8. Pour batter into a greased loaf pan.
  9. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before removing from pan and slicing.
