Ingredients

  • 3 cups cooked, mashed butternut squash
  • 1/4 cup evaporated skim milk
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon sugar
  • 1 tablespoon grated orange rind
  • 1/2 teaspoon grated lemon rind
  • 2 tablespoons diet margarine

Instructions

  1. Combine all ingredients and place in a sprayed 1-quart casserole.
  2. Place the casserole in a pan of hot water.
  3. Bake at 350°F for 50 minutes or until the center is firm.
