Ingredients

  • 4 small cans chicken broth
  • 1 medium butternut squash, peeled and cut up
  • 1 onion, quartered
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/2 to 3/4 cup milk

Instructions

  1. Combine all ingredients except milk in a pot and bring to a good boil.
  2. Lower the heat to medium and simmer until the squash is tender.
  3. Use a blender to puree any remaining chunks of squash in the pot.
  4. Stir in milk and heat through before serving.
