Ingredients

  • 1/2 cup grated Parmesan cheese
  • 1/2 cup butter
  • 2/3 cup crushed crackers
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 cup finely chopped onion
  • 1 pound white fish

Instructions

  1. Place butter and chopped onion in a 9 x 13-inch baking dish and bake in a 350°F oven until the butter is melted.
  2. In a bowl, combine crushed crackers, grated Parmesan cheese, basil, salt, oregano, and garlic powder.
  3. Dip each fish fillet in the melted butter mixture, then coat with the crumb mixture.
  4. Arrange the coated fillets in the baking dish.
  5. Bake at 350°F for 30 minutes or until the fish is tender and flaky.
  6. For summer, wrap each fillet individually in foil and cook on the grill until the fish flakes.
