Ingredients

  • 3 eggs
  • 2 Tbsp. milk
  • 1/8 tsp. pepper
  • 1 Tbsp. margarine or butter
  • 1/2 cup flaked smoked fish
  • 1/4 cup shredded Cheddar cheese

Instructions

  1. In a small bowl, blend eggs, milk, and pepper.
  2. Put margarine in a 10-inch skillet and melt over medium heat.
  3. Pour eggs into skillet.
  4. Cook until eggs are set, about 5 minutes.
  5. Sprinkle smoked fish and shredded Cheddar cheese over half of the omelet.
  6. With a spatula, carefully fold the other half over the filling.
  7. Cook until cheese melts, about 1 to 2 minutes.
