Ingredients

  • 2 eggs, separated
  • 1/4 cup oil
  • 2/3 cup oatmeal
  • 2 tablespoons wheat germ
  • 1 tablespoon sugar
  • 1 1/2 cups milk
  • 1 cup whole wheat flour
  • 1/4 cup cornmeal
  • 1 tablespoon baking powder
  • 1 teaspoon salt

Instructions

  1. Separate the egg whites and yolks.
  2. In a large bowl, combine the egg yolks, oil, milk, sugar, wheat germ, oatmeal, whole wheat flour, cornmeal, baking powder, and salt. Mix until well blended.
  3. In a separate bowl, beat the egg whites until stiff peaks form.
  4. Gently fold the beaten egg whites into the batter until just combined.
  5. Preheat your waffle iron and lightly grease if necessary.
  6. Pour the batter into the waffle iron and cook until golden brown and crisp, about 3-5 minutes.
  7. Serve warm with toppings of your choice.
