Caesar Red Coleslaw

Ingredients

  • 3 cups red cabbage, coarsely chopped
  • 1 cup carrot, coarsely chopped
  • 1/2 cup green onion, chopped
  • For the dressing
  • 1/2 cup light mayonnaise (I use light but you could probably use fat free or full-fat)
  • 1/4 cup parmesan cheese
  • 2 tablespoons lemon juice
  • 2 tablespoons Dijon mustard
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt (**)
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon Tabasco sauce
  • 1/2 teaspoon black pepper

Instructions

  1. Combine salt and garlic together to form a paste. Add to other dressing ingredients and mix well. In large bowl combine cabbage, carrots and green onions with the dressing.
  2. Toss until completely coated. Cover and refrigerate for 2 hours. Serve cold.
  3. For the sauce:
  4. Combine ingredients until combined.
  5. Store leftover dressing in refrigetator, covered for approximately 1 week.
