Ingredients

  • 3 lb. frying chicken
  • 3 Tbsp. oil
  • 1 onion
  • 1 green pepper
  • 1 clove garlic
  • 1/3 c. soy sauce
  • 1 (28 oz.) can diced tomatoes
  • 1/4 tsp. cayenne pepper

Instructions

  1. Brown chicken in 3 tablespoons oil in a deep skillet.
  2. Remove chicken, then add onion, green pepper, and garlic to the skillet.
  3. Sauté until onion is translucent.
  4. Add diced tomatoes, soy sauce, and cayenne pepper; bring to a boil.
  5. Lower heat and return the chicken to the skillet.
  6. Cover and simmer for about 1 hour, turning chicken halfway through.
  7. Serve over rice.
