Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 cup yellow cornmeal
  • 2 eggs
  • 1/4 cup shortening
  • 1/4 cup whipping cream
  • 3/4 cup milk
  • 1/2 cup finely chopped onion
  • 3 jalapeno peppers, seeds removed and minced

Instructions

  1. Preheat oven to 425°F.
  2. Grease 2 corn bread pans or 18 muffin cups.
  3. Combine flour, baking powder, salt, and sugar into a large bowl.
  4. With a fork, blend in the cornmeal.
  5. Add the eggs, shortening, whipping cream, milk, chopped onion, and minced jalapenos to the bowl.
  6. Stir just until all dry ingredients are moist, do not overbeat.
  7. Pour the batter into the greased hot pan or cups.
  8. Bake for about 20 to 25 minutes until golden brown.
