Ingredients

  • 2 cups cornmeal
  • 1 tablespoon salt
  • 1 teaspoon baking soda
  • 6 eggs
  • 2 medium onions, chopped
  • 1/2 cup jalapeno peppers, chopped
  • 16 oz cheddar cheese, grated
  • 2/3 cup oil
  • 2 (16 oz) cans creamed corn
  • 2 lb crawfish or shrimp tails

Instructions

  1. Mix the dry ingredients—cornmeal, salt, and baking soda—together in a bowl.
  2. Add grated cheddar cheese, chopped onions, and chopped jalapeno peppers to the dry mixture and combine well.
  3. Add eggs and oil to the mixture and stir until fully incorporated.
  4. Fold in the creamed corn until evenly mixed.
  5. Stir in crawfish or shrimp tails.
  6. Pour the batter into a greased baking dish and bake at 375°F (190°C) for about 30 minutes until golden brown.
