Ingredients

  • 1 ham bone or hock

  • 2 1/2 c. turnip or collard greens with liquid
  • 2 1/2 c. navy or Northern beans

Instructions

  1. Place ham bone or hock, chorizos, and salt pork in water and cook for 30 minutes.
  2. Add greens and beans to the pot and continue cooking.
  3. Saute chopped onion and green pepper until transparent in olive oil.
  4. Add sautéed vegetables to the soup.
  5. Peel and cut potatoes into small cubes and add to the soup.
  6. Season with salt and pepper to taste.
  7. Cook for an additional hour until flavors meld and potatoes are tender.
