Instructions

  1. In a stewpot, heat the oil over medium heat.
  2. Add the stew meat and cook until browned on all sides.
  3. Add sliced onion and garlic; sauté until translucent.
  4. Stir in diced tomatoes, salt, and cook for 5 minutes.
  5. Pour in 2 to 4 cups of water and bring to a boil.
  6. Add sliced carrots, quartered apples, shredded cabbage, sliced zucchini, and sliced corn ears.
  7. Reduce heat, cover, and simmer for about 45 minutes until the meat and vegetables are tender.
  8. Cook spaghetti noodles separately according to package instructions, or prepare 1 cup of raw rice.
  9. Serve the stew hot, garnished with chopped cilantro and accompanied by noodles or rice.
