Ingredients

  • 4 Tbsp. butter
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 2 cans creamed corn
  • 2 beaten eggs
  • 2 tsp. sugar
  • 1 c. Minute rice, uncooked
  • 2 jars pimento
  • salt and pepper to taste
  • cheese, grated
  • paprika

Instructions

  1. Saute butter, chopped onion, and chopped bell pepper.
  2. Add creamed corn, beaten eggs, sugar, uncooked rice, pimentos, salt, and pepper.
  3. Bake at 350°F for 25 minutes.
  4. Cover with grated cheese and paprika.
  5. Bake for an additional 15 minutes.
