Ingredients

  • 4 large eggs
  • 1 cup half and half
  • 1 (7 oz.) can whole kernel corn, drained
  • 1/2 lb. or 1 (10 oz.) can asparagus, cooked and drained
  • 1 1/2 cups shredded Cheddar cheese
  • 1 (6 3/4 oz.) can ham, flaked
  • 2 Tbsp. chopped onions
  • 1/2 tsp. salt

Instructions

  1. Beat eggs with half and half in a mixing bowl.
  2. Stir in drained corn, cooked and drained asparagus, 1 cup shredded cheddar cheese, flaked ham, and chopped onions.
  3. Add salt and pepper to taste.
  4. Carefully pour the mixture into a 10-inch pastry shell.
  5. Sprinkle remaining cheese over the top.
  6. Bake in a preheated 375°F oven for 45 minutes or until a knife inserted in the center comes out clean.
