Ingredients

  • 1 1/2 cups seedless raisins
  • 1 1/2 cups water
  • 1 slightly beaten egg
  • 1 cup brown sugar
  • 2 tablespoons cooking oil
  • 1 tablespoon grated orange peel
  • 2 1/2 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder

Instructions

  1. Combine raisins and water; bring to a boil, then cool to room temperature.
  2. Mix the slightly beaten egg, brown sugar, cooking oil, and grated orange peel.
  3. Stir the egg mixture into the raisin mixture.
  4. Sift together all-purpose flour, salt, and baking powder.
  5. Add the dry ingredients to the raisin mixture, beating well until smooth.
  6. Pour the batter into a greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
  7. Bake at 325°F (163°C) for about 60 minutes, or until a toothpick inserted into the center comes out clean.
