Ingredients

  • 1/2 lb bacon
  • 2 lb potatoes diced
  • 1 med onion diced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 12 large eggs
  • 1-1/2 cups shredded cheddar cheese
  • Salsa or Ketchup

Instructions

  1. Cook bacon in a large skillet until crisp, then remove bacon and drain on paper towels, reserving 2 tablespoons of drippings in the skillet.
  2. Crumble bacon and set aside.
  3. Saute potatoes, onion, 1/2 teaspoon salt, and 1/4 teaspoon pepper in hot drippings, stirring occasionally for 20 minutes or until browned.
  4. Whisk together eggs, remaining 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  5. Pour the egg mixture over the potatoes in the skillet.
  6. Cook over medium heat for 4 minutes or until eggs are set, stirring if necessary.
  7. Sprinkle with bacon and cheese if desired.
  8. Serve with salsa or ketchup.
