Ingredients

  • 2 tsp. white wine vinegar
  • 8 1/4-inch thick slices unpeeled tomatoes
  • 1 (1 lb.) loaf French bread
  • 1 clove garlic, halved
  • 1 (1 lb.) unpeeled eggplant, cut into 1/2-inch slices
  • 4 (1/4-inch) thick slices onion
  • vegetable cooking spray
  • 2 Tbsp. chopped fresh basil
  • 1 Tbsp. chopped kalamata olives

Instructions

  1. Slice the French bread in half lengthwise and place it cut side up on a baking sheet.
  2. Broil the bread 3 inches from the heat for 30 seconds or until lightly browned.
  3. Rub the cut sides of the bread halves with the halved garlic clove, then discard the garlic.
  4. Arrange the unpeeled tomato slices, eggplant slices, and onion slices on the baking sheet.
  5. Spray the vegetables with vegetable cooking spray and roast until tender and slightly browned, about 10-15 minutes.
  6. Remove the vegetables from the oven and let cool slightly.
  7. Spread chopped fresh basil and chopped kalamata olives on the bread halves.
  8. Layer the roasted vegetables on the bread, then close the sandwich and serve.
