Capri Sandwich
A vibrant Mediterranean-inspired sandwich featuring roasted vegetables, fresh basil, and flavorful bread, perfect for a light lunch or casual dinner with bold, fresh flavors.
Ingredients
- 2 tsp. white wine vinegar ⓘ
- 8 1/4-inch thick slices unpeeled tomatoes ⓘ
- 1 (1 lb.) loaf French bread ⓘ
- 1 clove garlic, halved
- 1 (1 lb.) unpeeled eggplant, cut into 1/2-inch slices ⓘ
- 4 (1/4-inch) thick slices onion ⓘ
- vegetable cooking spray
- 2 Tbsp. chopped fresh basil ⓘ
- 1 Tbsp. chopped kalamata olives ⓘ
Instructions
- Slice the French bread in half lengthwise and place it cut side up on a baking sheet.
- Broil the bread 3 inches from the heat for 30 seconds or until lightly browned.
- Rub the cut sides of the bread halves with the halved garlic clove, then discard the garlic.
- Arrange the unpeeled tomato slices, eggplant slices, and onion slices on the baking sheet.
- Spray the vegetables with vegetable cooking spray and roast until tender and slightly browned, about 10-15 minutes.
- Remove the vegetables from the oven and let cool slightly.
- Spread chopped fresh basil and chopped kalamata olives on the bread halves.
- Layer the roasted vegetables on the bread, then close the sandwich and serve.
