Ingredients

  • 5 cups white sugar
  • 2 cups cream
  • 1/2 cup milk
  • 1 tablespoon vanilla
  • 1/2 stick butter or margarine
  • 1 to 3 cups chopped pecans
  • 2 cups marshmallows

Instructions

  1. Mix together 4 cups of sugar, 2 cups of cream, and 1/2 stick of butter or margarine in a medium saucepan and put on medium fire.
  2. Put 1 cup of sugar in a skillet and melt it.
  3. When the other mixture comes to a boil, pour in the melted sugar, stirring constantly.
  4. As soon as the melted sugar is combined with the other mixture, add the 1/2 cup of milk and continue cooking until you can form a soft ball.
  5. Add the chopped marshmallows and continue stirring until melted, then remove from heat.
  6. Add the vanilla and chopped pecans, stir well.
  7. When the mixture is cool enough, pour onto a buttered dish.
  8. Allow to fully cool before cutting into pieces.

Tips & Substitutions

For a smoother fudge, ensure that the sugar dissolves completely before adding the melted sugar. If you want to add a different flavor, consider using almond extract instead of vanilla. You can also substitute chopped walnuts or cashews for pecans based on your preference. Make sure to keep an eye on the temperature; overcooking can result in a hard texture.

Serving Suggestions

Cut the fudge into small squares for serving, and consider drizzling melted chocolate over the top for an extra treat. This caramel fudge pairs beautifully with a scoop of vanilla ice cream or a cup of coffee. For a more festive presentation, serve it alongside holiday cookies or as part of a dessert platter.

Storage & Reheating

Store leftover caramel fudge in an airtight container at room temperature for up to a week. For longer storage, refrigerate it, but allow it to come to room temperature before serving for the best texture. Avoid storing it in a humid environment to prevent it from becoming sticky.

Frequently Asked Questions

Can I use a different type of nuts in this recipe?

Yes, you can easily substitute pecans with other nuts like walnuts or almonds, depending on your preference. Just make sure to chop them roughly so they mix well into the fudge.

What can I do if my fudge is too soft?

If your fudge turns out too soft, it may not have reached the right temperature. You can place it back on low heat and cook it a bit longer, stirring constantly until it firms up. Alternatively, you can refrigerate it for a few hours to help it set.

Is it possible to make this fudge dairy-free?

Yes, you can make a dairy-free version of caramel fudge by substituting the cream and milk with coconut cream and almond milk. Use dairy-free margarine instead of butter for a complete dairy-free option.
