- In a bowl, combine yeast, 2 2/3 cups of flour, and baking soda.
- Heat cottage cheese, water, sugar, butter, and salt until the butter melts.
- Add the heated mixture to the dry ingredients.
- Add eggs, caraway seeds, and grated onion to the mixture.
- Beat on low speed for 30 seconds.
- Beat on high speed for 3 minutes.
- By hand, stir in the remaining 2 cups of flour.
- Place the dough in a greased bowl, turning once to coat.
- Let the dough rise, covered, until doubled in size, about 1.5 hours.
- Divide the risen dough into 24 pieces and place in well-greased muffin pans.
- Cover the pans and let the dough rise until doubled in size, about 40 minutes.
- Bake at 400°F (200°C) for 12 to 15 minutes until golden brown.
