Ingredients

  • 2 pkg. yeast
  • 4 2/3 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 2 c. cream-style cottage cheese
  • 1/2 c. water
  • 4 Tbsp. sugar
  • 2 Tbsp. butter or margarine
  • 2 tsp. salt
  • 2 eggs
  • 4 tsp. caraway seed
  • 4 tsp. grated onion

Instructions

  1. In a bowl, combine yeast, 2 2/3 cups of flour, and baking soda.
  2. Heat cottage cheese, water, sugar, butter, and salt until the butter melts.
  3. Add the heated mixture to the dry ingredients.
  4. Add eggs, caraway seeds, and grated onion to the mixture.
  5. Beat on low speed for 30 seconds.
  6. Beat on high speed for 3 minutes.
  7. By hand, stir in the remaining 2 cups of flour.
  8. Place the dough in a greased bowl, turning once to coat.
  9. Let the dough rise, covered, until doubled in size, about 1.5 hours.
  10. Divide the risen dough into 24 pieces and place in well-greased muffin pans.
  11. Cover the pans and let the dough rise until doubled in size, about 40 minutes.
  12. Bake at 400°F (200°C) for 12 to 15 minutes until golden brown.
