Ingredients

  • 2 c. carrots, sliced 1/2-inch thick
  • 2 peeled sweet potatoes, cubed 1/2-inch thick
  • 1 (20 oz.) can pineapple chunks, drained
  • 1/4 c. water
  • 2 Tbsp. light brown sugar
  • 1 Tbsp. cornstarch
  • 2 tsp. soy sauce
  • 1 tsp. vinegar
  • 1/2 tsp. grated orange rind
  • 1/4 c. golden raisins
  • dash of salt

Instructions

  1. Place carrots in a vegetable steamer; cover and steam for 2 minutes.
  2. Add sweet potatoes and steam for an additional 8 minutes.
  3. Remove from heat and set aside.
  4. In a saucepan, combine pineapple juice, water, brown sugar, cornstarch, soy sauce, vinegar, and orange rind.
  5. Cook over medium heat, stirring constantly until the mixture thickens.
  6. Add pineapple chunks and golden raisins; stir to combine.
  7. Add the steamed carrots and sweet potatoes to the sauce, mixing gently.
  8. Heat through and serve warm.
