Ingredients

  • 1 Tbsp. oil
  • 1 lb. chicken, chopped
  • 1 large onion, chopped
  • 2 Tbsp. soy sauce
  • 1/4 c. water
  • 1 clove garlic
  • 2 tsp. curry
  • 1 Tbsp. parsley
  • 2 large tomatoes, chopped

Instructions

  1. Heat oil in a skillet.
  2. Brown the chopped chicken and reduce heat to low.
  3. Add chopped onion, garlic, soy sauce, water, curry, parsley, and chopped tomatoes; mix well.
  4. Simmer, covered, for 1 hour, stirring occasionally and adding water as necessary.
  5. Serve over rice.
