Ingredients

  • 1 egg
  • 3/4 cup milk
  • 1 cup raisins
  • 1 chopped apple, peeled
  • 1/2 cup oil
  • 1 cup all-purpose flour
  • 1 cup quick oats
  • 1/3 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon nutmeg
  • 2 teaspoons cinnamon

Instructions

  1. Beat the egg in a large bowl.
  2. Add milk, raisins, chopped peeled apple, and oil; mix well.
  3. Stir in flour, oats, sugar, baking powder, salt, nutmeg, and cinnamon until just combined.
  4. Fill greased muffin pans or baking cups three-quarters full.
  5. Bake at 400°F (200°C) for 15 to 20 minutes until golden brown.
  6. Remove from oven and let cool slightly before serving.
