Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups wheat germ
  • 1 tablespoon cinnamon
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon grated orange rind
  • 1 tablespoon baking powder
  • 2 eggs
  • 1/4 cup corn oil
  • 1/4 cup honey
  • 1/2 cup orange juice
  • 1 1/2 cups shredded carrots

Instructions

  1. Combine the dry ingredients in a large bowl.
  2. In another bowl, beat the eggs with the remaining ingredients.
  3. Stir the egg mixture into the dry ingredients until just combined.
  4. Pour the batter into a lightly oiled bread pan.
  5. Bake at 350°F (175°C) for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
