Ingredients

  • 2 c. cake flour
  • 2 c. sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2/3 tsp. cinnamon
  • 4 eggs
  • 1 c. salad oil
  • 3 c. grated carrots
  • 1/2 c. chopped pecans, toasted

Instructions

  1. Preheat the oven to 300°F (150°C). Grease two 9-inch round cake pans.
  2. In a bowl, sift together the dry ingredients: cake flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat the eggs; then add the salad oil and mix well.
  4. Add the oil mixture to the dry ingredients and mix thoroughly until combined.
  5. Stir in the grated carrots and toasted chopped pecans, mixing well.
  6. Pour the batter evenly into the prepared cake pans.
  7. Bake in the preheated oven for 50 to 60 minutes, or until the center is firm when tested with a toothpick.
  8. Remove from the oven and let stand for 15 minutes.
  9. Remove the cakes from the pans and let cool completely before frosting.
